Brioche Rolls

INGREDIENTS
  • 500g flour
  • 80g sugar
  • 80g butter, at room temperature
  • 250ml warm milk
  • 25g fresh yeast
  • Pinch of salt
  • 1 egg
  • 1tsp vanilla extract
  • 1 egg yolk and 2 tbsp milk, to paint.
  • 1tbps sugar and 1/2 tbsp orange-flower water, to decorate

INSTRUCTIONS

Preheat oven to 180ºC.

Dissolve the yeast in warm milk.

In a mixer beat the flour, sugar, salt, yeast dissolved in the warm milk, egg and vanilla extract in medium speed. Add the butter slowly until blended into the dough. 

Mix for about 10 minutes. The dough will be quite sticky, but that's how it should be.

Once we have the dough ready, let rest covered with a plastic film or cloth in a warm place in our kitchen. In one hour it will double its volume.

At this moment make balls, around 60g each. Place them on a baking tray and let rest another hour again.

After this time, give them a cut.

With the milk and egg yolk, paint the top of each roll. 

Mix the sugar and orange-flower water and put it on the court.

Bake for about 10 minutes.
